Spinach All-in-One

  
It's your vegetable, protein, and carbohydrate all in one bowl. It's healthy to your body, cheap to your pocket and tasty to your mouth!

Ingredients: Makes 6 servings
  • 1 frozen bag of spinach (20oz) 
  • 2 tablespoons of tomato paste 
  • 1/4 cup of rice (Uncle Bens is preferable)
  • 3 1/2 cups of fat free chicken broth 
  • 3 tablespoons of olive oil 
  • 1 tablespoon of butter (Best Life is preferable)
  • 1 can of Tomato Sauce (8oz) 
  • 1 medium sized onion (diced)
  • 7 cloves of garlic 
  • 1 cup of dill (coarsely chopped)
  • 2 cups of cilantro (coarsely chopped)
  • Juice of one lemon 
  • 1 whole jalapeno 
  • 2 teaspoons of salt
  • 1/2 teaspoon of black pepper 
  • 2 teaspoons of ground coriander 
  • 1lb of cooked minced meat (lean 93%)
Directions: 
  1. In a 3 QT pot, sautée onion in 2 tablespoons of olive oil. When it changes color add in 2 tablespoons of tomato paste then the broth with the salt and pepper. 
  2. Rinse the rice and put it with 3 cloves of diced garlic into the broth. Leave it for 10 minutes until its cooked. 
  3. Add the tomato sauce, and the chopped dill and cilantro into the pot. Remove the seeds from the jalapeno and add that in as well. 
  4. After 5 minutes, put in the cooked minced meat and spinach. 
  5. In a separate pan, heat the butter with 1 tablespoon of olive oil. Then add the 4 cloves of chopped garlic with 2 teaspoons of ground coriander for a couple of minutes until the garlic becomes pale in color (not brown). 
  6. Put the garlic mixture into the pot and add the lemon juice. 
  7. Leave the pot on Medium High. Wait until it all starts to boil and then turn off the heat.

Tropical Mango Whip

It's a simple, easy, fancy and healthy recipe!

Ingredients: Makes 6 servings
  • Two 120z Frozen Mango Bags or 4 pieces of fresh mango
  • 1 cup of pure mango juice (good quality)
  • 1 box of Jello-O Island Pineapple
  • 4 Tablespoons of Cool Whip (Lite or Regular)
Directions:
  1. Cook the gelatin as directed to on the box but with only 1 cup of water (1/2 cup of boiled water & 1/2 cup of cold water). This is to increase the flavor and the density. After it's cooked, let it cool down for 10 minutes. 
  2. Puree all the ingredients (frozen mango, juice, gelatin and cool whip) in a blender.
  3. Pour into the serving cup of your choice and leave it in the refrigerator for at least 3 hours.
